Beets are a root vegetable with a deliciously sweet and earthy taste. Boiled, juiced, roasted, pickled, or baked, beets can add a sugary twist to any meal, as a side or an entree. Beet greens can be either chopped and eaten raw in a salad with or without other greens, or boiled as you might kale and add oil or butter and spices to your preference.
Storage tip: In a closed plastic bag in the fridge, beet greens will keep fresh for two weeks or more, and beets will stay firm for months!
